I love this recipe because it's great as a side or a main dish - plus, it's really easy to modify. This is a little lighter than a traditional mac'n'cheese, so if you want to make it cheesier, then just increase your cheese and milk a half cup at a time. You can also add chicken, carrots, peas, or any other meat and veggies you'd like. Enjoy!
Ingredients:
1 box of pasta (I like any spiraled pasta for this recipe)
1/2 stick of butter
1 cup of milk
1 cup shredded cheddar cheese
1 1/2 cups of cooked broccoli, chopped
Salt and pepper (to taste)
Grated parmesan cheese, to garnish
Instructions:
In a large pot, boil water for your pasta (do not add oil to the pasta water).
While the pasta is cooking, preheat your oven to 375 degrees.
Once the water is boiling, add your pasta, and stir occasionally until cooked al dente.
Pour your strained pasta back into the pot with the half stick of butter, cheddar cheese, salt, pepper, milk, and broccoli. Stir until evenly mixed.
Lightly coat a 13" x 9" baking pan with cooking spray.
Pour in your pasta mixture and top with grated parmesan cheese. Cover with aluminum foil and bake for 30 minutes (if you added extra to make it cheesier, you may need to cook for a little longer).
If desired, you can top with additional parmesan cheese and fresh chopped parsley, and serve!
