This is hands-down the easiest breakfast casserole recipe I have found and as always, it's easy to customize for your family or for special events. This is perfect for busy holiday mornings, brunch, and lazy Sundays. Enjoy!

Ingredients:
1 lb. of your desired meat, I use either bacon or sausage (you can always skip this for a meat-free option)
6 eggs
Any veggie you want to add, spinach or mushrooms work great, but peppers would be awesome too
1 package of crescent rolls
1 cup of cheese
Salt and pepper to taste
Parsley to taste
1/4 cup milk
Instructions:
Preheat oven to 400 degrees.
Cook your meet in a large skillet. If you use sausage, you’ll want to break up the meat as it browns. For bacon, cook until slightly crispy, chop into bits. Drain fat and set aside.
Now, chop and cook your veggies in the same skillet. Mix with your meat.
In a 13 x 9 pan, spray bottom and sides with cooking spray and roll out crescent rolls in one sheet, pinching together seams.
Then add in your meat and veggies, topping your crescent roll layer evenly.
Now do the same with your cheese, I use 1/4 cheddar and 3/4 Mexican blend so it’s not too greasy.
Mix your eggs milk, salt, and pepper. Once thoroughly mixed, pour evenly into baking dish.
Top with parsley and bake for 25-30 mins. Too will be golden and crispy at the edges and eggs should be firm / fully cooked.
