Gabby's Greek Chicken

This recipe is my own take on souvlaki. It is super easy and great for an family dinner night. I usually pair it with potatoes, salad, and some fresh bread.





Ingredients:

  • 3 fresh lemons

  • 1 cup of olive oil

  • Salt and pepper (to taste)

  • 1/2 tablespoon of fresh Greek oregano

  • 1/2 tablespoon of fresh parsley

  • 1/2 tablespoon of freshbasil

  • 1 tablespoon of dried onion powder

  • 1 tablespoon of dried of cumin

  • 3/4 cup of chicken broth


Instructions:

  1. Marinate your chicken in the juice from your 3 lemons, olive oil, and some salt and pepper - I usually like to give it at least 3-4 hours to soak into the meat.

  2. About 30 minute before you are ready to start cooking, chop up your fresh oregano, parsley, and basil. Set aside.

  3. Next, preheat your oven to 350 degrees.

  4. Once you are almost ready to throw the chicken in the oven, add a little olive oil to coat your baking pan.

  5. Next, remove the chicken from your marinade and add to a baking pan.

  6. Now top the chicken breasts with your herbs.

  7. Add a little more salt and pepper (depending on your preference). Then, I like to add a splash of chicken broth to the bake pan.

  8. Bake until your chicken is fully cooked (an internal temperature of 165 degrees), which usually takes about 45 minutes to 1 hour.

  9. Once the chicken is full cooked, let rest for 5 to 7 minutes and then slice and / or cut to your preference.

  10. Then you are ready to serve!
