Sausage and Pepper Hoagies

I love this savory meal because it is so easy to make and so filling! Plus, it's definitely a comfort food in many Italian households. Depending on your preference, you can always modify this recipe to kick up the spice level.

Ingredients:

  • 2-3 mild Italian sausages (I like turkey sausage because it cuts out a lot of grease)

  • 1 red pepper

  • 1 yellow pepper

  • 1 green pepper

  • 1/2 white onion

  • 1 Tbs. of tomato paste

  • 1/2 cup of tomato sauce

  • 1 can of diced tomatoes

  • Splash of red wine

  • Salt, pepper, crushed red pepper flakes, oregano, and basil to taste.

  • Grated parmesan cheese

Instructions:

  1. In a large saucepan, coat the bottom of your pan with a thin layer of extra virgin olive oil and bring to a medium heat.

  2. Add your sausages, rotating so each side is well browned.

  3. While the sausage is browning, core your peppers. Slice the peppers and half onion into 1/4 inch strips.

  4. Once your sausages are browned on all sides, remove from the sauce pan, and place on a cutting board. Leave the juice from the sausages in your pan.

  5. Add your veggies, tomato paste, and wine to the saucepan with all the sausage juices. Stir and allow to simmer.

  6. Cut each sausage into 1/2 inch angled slices and add back into the sauce pan with your herbs, spices, cooking until the sausage pieces and veggies are fully cooked (don't let your veggies get too soft though).

  7. Now add the diced tomatoes and tomato sauce - stir and sprinkle parmesan cheese over the top, cover and reduce heat to low.

  8. Cook for approximately one hour, serve on hoagie rolls, garnished with fresh basil and grated parmesan cheese. Enjoy!
